So what was on Nat’s Plant-Based Menu for last week?
Well… Veggie Lasagna for one and it was a winner!
I planned on making a few more new recipes but my life has been a bit crazy traveling for volleyball and work. I am so fortunate to have such fun volleyball parents to share my weekends with but seriously… my liver could use a break! I ate horrible and might have had a few too many cocktails.
This week is more of the same with work travel, a swing choir show and volleyball so who knows what new fangled recipes I will share next week… stay tuned.
It was delish — I mixed up the layers (on accident) – does anyone else get confused when layering the lasagna ingredients??? Good lord, I feel like my masters degree was easier sometimes. I do it with all lasagna recipes!
Well anyway…I essentially used this recipe from…Vegan RIcha. I had some Tofurkey Ricotta so added that and used brown rice lasagna but other than that the recipe was essentially the same. SO GOOD! Yep, a winner with everyone in my household.

VOLLEYBALL !!!!! No dinners at home. I was planning to show you my meals I chose from the weekend but true transparency here… I didn’t choose as well as I would have liked! I travel for volleyball again this weekend and next so there is ALWAYS hope! 🙂
